Why these books

Written from behind the counter.

Most cheese books are written from the outside looking in. These are written by someone who cuts, sells and judges cheese for a living. Morgan McGlynn Carr runs Cheeses of Muswell Hill, the award-winning family cheese shop in North London, has been the resident cheese expert on Channel 4's Sunday Brunch for twelve years, and has spent thirteen years judging at the World Cheese Awards.

Each book takes one part of that knowledge and makes it usable at home. The Modern Cheesemaker teaches you to make cheese. The Modern Cheeseboard shows you how to build a board for any occasion. The Complete Cheese Pairing Cookbook explains what to eat and drink with every cheese, and why it works.

The pairing book

The Complete Cheese Pairing Cookbook

The guide to what goes with what, and why. Pairing explained by a World Cheese Awards judge.

A good pairing can turn a decent cheese into a memorable one. This book shows you how to find it. It starts with the essentials, what cheese pairing is and what gives a cheese its character, then teaches you to pair like a professional: with crackers, chutneys, fruit, nuts, charcuterie, wine, beer and spirits.

From there it moves into pairing boards with classic and unexpected combinations, a seasonal pairing guide, recipes for every kind of occasion, and an A to Z of 200 cheeses from around the world, each with suggested pairings. It is organised both by cheese and by the ingredient you want to pair, so it works as well at the cheese counter as it does in the kitchen.

Inside

  • How to pair cheese like a professional
  • An A to Z of 200 cheeses with pairings
  • Pairing boards, classic and unexpected
  • A seasonal pairing guide
  • Wine, beer, spirits and soft drinks

Best for: anyone who wants to understand flavour, host with confidence, or move beyond the predictable board. Cheesemongers use it too.
